Banana Tres Leches Cake

Here is a very good cake recipe. I decided to post it because everytime I make it people ask for the recipe. So here it is give it a try and enjoy

Banana Tres Leches Cake

1 box white cake mix
1¼ cups water
2 tablespoons vegetable oil
3 eggs
1 cup ripe mashed bananas (about 2 bananas)
1 can (14 ounce) sweetened condensed milk
½ cup coconut milk (not cream of coconut)
½ cup whipping cream

Heat oven to 350 degrees (325 for dark or nonstick pan). Grease bottom only of 13x9 inch pan
In large bowl beat cake mix, water, oil, eggs, and mashed bananas with electric mixer on low speed for 30 seconds; beat on medium speed for 2 minutes, scrapping bowl occasionally. Pour into pan
Bake for 30 – 35 minutes or until toothpick inserted in center comes out clean. Cool completely, about an hour
Poke top of cake every ½ inch with fork, wiping fork occasionally to reduce sticking. In large bowl, stir together condensed milk, coconut milk, and whipping cream. Carefully pour over top of cake. Cover; refrigerate at least 2 hours or overnight until mixture is absorbed into cake.


2 cups heavy whipping cream
1 cup powdered sugar
1 8 ounce block of cream cheese (room temperature)
½ teaspoon vanilla or ¼ teaspoon coconut extract

In medium bowl whip whipping cream and ½ cup of powdered sugar together until you get peaks about 2 minutes on medium speed
In a large bowl mix cream cheese and ½ cup powdered sugar together until light and fluffy about 5 minutes on medium speed
Fold whipped cream mixture into cream cheese mixture add vanilla or coconut extract (extract optional without extract you can taste the cream cheese more)
Cover cake generously with frosting (I usually have left over frosting and it is really good on fruit). You can also garnish the cake with banana slices and coconut if desired.
